Sometimes I look back through the archives of the blog & realize that while I typically do not share more than a couple of new recipes per month, the recipes that I do share are really special to me. For example, I posted my recipe for pea & pistachio pesto here a couple of years ago. And the other day I was contemplating how this recipe really deserves more attention! Because my pea & pistachio pesto is such a versatile condiment, I wanted to show you a unique way that you can use it in this pea & pistachio pesto pasta!

I am filing this recipe under the quick & easy category because in the time it takes to make the pea & pistachio pesto, you can have your pasta boiled and you are just a few minutes away from a beautiful meal! You can read all about how my pea & pistachio pesto came to be here. To summarize, this pea & pistachio pesto has everything about a recipe that I love. It has savory notes, sweet notes, varying textures and can be used in so many different ways! It is a great staple to have in your refrigerator waiting to be used in meals throughout the week. We have used it on toast with dollops of ricotta or goat cheese and a poached egg for breakfast. And in salads, wraps or sandwiches for lunch. Today I am showing you how to turn it into an incredible pasta dish!

PEA & PISTACHIO PESTO

The process of making this pea & pistachio pesto pasta could not be any easier! To a saucepan, you simply add a big scoop of the pesto along with al dente spaghetti & reserved pasta water. You cook this mixture over medium heat, stirring until you have achieved a creamy texture. We like to top ours off with burrata, salt & pepper, lemon zest & olive oil. For a dairy-free version, you can simply substitute the parmesan cheese with a bit of nutritional yeast & the burrata with some vegan ricotta!

  • Total Time: 25 minutes

Ingredients

Units Scale
  • 2 cups pea & pistachio pesto
  • 1 lb/454 g spaghetti, prepared al dente
  • 1 cup reserved pasta water
  • 4 balls of burrata (or 2 cut in half if your burrata is large) *substitute with vegan ricotta if dairy free
  • lemon zest, for garnish
  • salt & pepper, for garnish
  • extra virgin olive oil, for garnish

Instructions

  1. While you prepare the pea & pistachio pesto (recipe here) bring your pasta water to a boil & cook the spaghetti until al dente.
  2. Reserve 1 cup of the pasta water & add the cooked spaghetti to a large saucepan along with 2 cups of the prepared pea & pistachio pesto and the 1 cup of reserved pasta water.
  3. Cook over medium heat, continuously stirring until a creamy texture is achieved, this usually takes about 5 minutes.
  4. Portion the pasta between four plates. Top each plate of pasta with a ball of burrata (I like to break the burrata open a bit), drizzle with olive oil, sprinkle with salt, pepper & lemon zest & serve!

    Oh Bella! I remember this pea and pistachio pesto so vividly from the workshop! I absolutely loved it! And after a hiatus at the market, fresh english peas made their way back last Thursday. If they have them again this week I will make this!

    I will admit that at first I was a skeptic when she told me the name of the dish was “PEA & PISTACHIO PESTO PASTA”, but once I tried it I was blown away!!!

    and my wifey couldn’t believe how such a flavor an luxurious dish could be whipped together so quickly and easily, there was absolutely NO leftovers of any portions at ALL!!! THANK YOU THANK YOU THANK YOU for yet another quick and easy meal that is taste bud bending Bella!!
