Hot summer days and nights make for the need for meals that come together in a flash. Not to mention, when hunger strikes and you just do not feel like heating up your house with cooking, having ingredients prepped ahead of time can make all the difference. Enter these fruit + grain yogurt bowls. Light & refreshing with a super satisfying texture thanks to wheat berries, we have been enjoying these with the first of the summer fruits that have been coming into season here on the island. Quick, easy and super healthy, these bowls have become a daily staple in our kitchen.

The idea for these yogurt bowls came to me after cooking up a big pot of wheat berries for a salad recipe I shared here on the blog last week. With leftover wheat berries on hand, I thought of combining them with our daily dose of Greek yogurt & local honey. But I did not just stop there. Fresh fruit, namely peaches and cherries, get drizzled with a bit of cream and then the bowls get finished off with a touch of mint from the garden – these are basically perfection!

I am not kidding you guys when I say that we eat these fruit + grain yogurt bowls everyday. We just cannot get enough of them! The texture of the wheat berries is probably my favorite part, chewy and hearty, they are the ideal foundation for whatever fruit is coming into season where you live. This recipe is really more of a guide to inspire you to come up with whatever combination of ingredients works for you! Are you gluten-free? Then substitute the wheat berries with something like millet or buckwheat. Are you vegan or dairy free? Then substitute the yogurt & cream with coconut versions of each and the honey with something like date syrup! The possibilities are truly endless!

FRUIT + GRAIN YOGURT BOWLS


  • Yield: 1 serving

Ingredients

  • Greek yogurt (or non-dairy yogurt of your choice)
  • cooked & cooled wheat berries (or other prepared grain of your choice)
  • fresh, in season fruit – pitted & sliced
  • heavy cream (substitute coconut cream for dairy free option)
  • honey (or syrupy sweetener of your choice)
  • mint

Instructions

  1. Spread approximately 1 cup of yogurt into a bowl or small plate
  2. Top yogurt with about 1 cup of wheat berries
  3. Add slices of fresh fruit and then drizzle with cream & honey
  4. Finish off with a garnish of fresh mint

    I would have never thought to use wheat berries in a yogurt bowl! I love the chewy texture and I feel so healthy when I eat them ;) Will make a batch today so that I can enjoy them for breakfast tomorrow!
